Created by Archie Rose, chef Josh Niland and bar manager Samuel Cocks of Saint Peter restaurant, this one-of-a-kind collaboration gin celebrates a shared commitment to the provenance and integrity of locally sourced ingredients, and the pursuit of flavour without waste.
At the heart of this spirit is ethically caught John Dory, meticulously dry-handled and dried to honour the fish in its entirety - a process unique to Saint Peter - with the bones then distilled by the Archie Rose team and paired with local and native Australian botanicals including sunrise lime, celery, sea lettuce and green Kampot pepper grown in Mullumbimby, NSW.
The result is a complex, umami-rich gin that speaks to the full potential of every ingredient, revealing a nose of spring meadows, along with notes of fresh yuzu zest, resinous pine and bonito flakes, lead by the ethically sourced John Dory.
