Red Gum Cask Rum

The eighteenth release in our Trials & Exceptions series, Red Gum Cask Rum, is a quintessentially Australian rum, matured in native red gum timber casks dating back to the 1930s. 

These casks, previously used to age Australian apera, bring a storied legacy to a spirit crafted from NSW high-test molasses, refiner’s molasses, and mill molasses. 

This rum opens with aromas of sultana, leather, and salted caramel, followed by a palate of honey and tiramisu.
